Lori's Cod Bake

  1. Heat oven 350.
  2. Place cod in a deep skillet.
  3. Ad bay leaf.
  4. Cover with wine.
  5. Poach cod until just cooked.
  6. Drain.
  7. Flake.
  8. Set aside.
  9. Boil potatoes and greens until tender.
  10. Drain.
  11. Heat oil in a skillet.
  12. Add onions.
  13. Saute 10 minutes or until golden.
  14. Add tomatoes.
  15. Saute 5 minutes.
  16. Season.
  17. In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
  18. Pour oil over top.
  19. Bake 1 hour.
