Italian Omlette
- 2 tomatoes, sliced
- 2 medium potatoes
- 4 eggs
- 4 tbsp olive oil
- 2 clove garlic, minced
- 1 tsp dried basil
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 cup mozarella cheese
- Boil the potatoes in salted water for 10 - 15 minutes.
- Then peel and set to cool.
- Slice the tomatoes and potatoes into meduim slices.
- In a bowl, mix the seasoning.
- Rub the seasoning into the vegetables.
- In an oil drizzled pan, alternate a pototato slice then a tomato slice, in a circular motion to fill the pan.
- Cook the vegatables on medium heat for a few minutes.
- In the same bowl where you mixed the seasoning, whisk the eggs.
- Pour the eggs onto the vegetables, then let it cook on low heat for 7 -10 minutes.
- Remove from the stove, the eggs on the surface should still be runny.
- Add the cheese on top, and put under the grill to melt the cheese and continue to cook the eggs for 3 - 5 minutes.
- Perfect with fresh bread on a weekend morning, enjoy!
