Saucy Chicken Parmesan Skillet
- 1 Tbsp. oil
- 4 small boneless skinless chicken breasts (1 lb.)
- 1/2 lb. fresh mushrooms, chopped
- 1 onion, chopped
- 1 can (14.5 oz.) Italian-style diced tomatoes, undrained
- 1/2 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
- 1/4 cup KRAFT Grated Parmesan Cheese
- Heat oil in large skillet on medium heat.
- Add chicken, mushrooms and onions; cook 8 to 10 min.
- or until chicken is done (165 degrees F), turning chicken and stirring vegetables after 5 min.
- Remove chicken from skillet, reserving cooked vegetables in skillet; cover chicken to keep warm.
- Add tomatoes to vegetables in skillet; stir.
- Cook 5 min.
- or until heated through, stirring occasionally.
- Top with chicken and cheeses; cook, covered, 2 min.
- or until mozzarella is melted.
