Father's Favorite Fish Fillets!
- 4 fish fillets, thawed if frozen (cod loins)
- 4 slices bacon, partially cooked
- 4 slices tomatoes
- 12 cup sharp cheddar cheese, shredded
- 14 teaspoon kosher salt
- 14 teaspoon fresh ground pepper
- 12 teaspoon Old Bay Seasoning
- 3 tablespoons butter
- 1 tablespoon lemon juice
- 1 12 teaspoons Worcestershire sauce
- 12 teaspoon prepared mustard
- 12 teaspoon kosher salt
- Combine sauce ingredients in a microwave safe bowl and nuke until melted.
- Stir to combine and set aside.
- Heat oven to 350F Lightly salt and pepper fish and sprinkle with old bay on both sides.
- Spray bottom of oven proof casserole, large enough to hold fillets.
- Place fish into casserole and cover with bacon strips and pour over HALF of butter sauce.
- Bake for 20 minutes.
- Less time for thinner fillets.
- NOTE: I buy Wild caught frozen Cod Loins at Sam's Club.
- They are each about the size of a hot dog bun.
- Remove from oven after 20 minutes and place tomato slices over the top.
- Sprinkle with cheese ( I have also used shredded Parmesan)and pour over remaining butter sauce.
- Turn oven to broil and place back in oven at least 6 inches from heat source.
- Broil until top bubbles and cheese is melted.
