Apricot Braised Pork Loin Recipe

  1. Heat oil in Dutch oven over medium-high heat.
  2. Add in pork and brown on all sides.
  3. Add in onions, carrot and garlic; cook 3 to 5 min till onions are tender.
  4. Add in nectar, mustard, salt and sufficient water to almost cover pork.
  5. Bring to a boil.
  6. Cover and bake 1 1/2 hrs in preheated 375 degrees oven till meat thermometer inserted in thickest part reads 170 degrees.
  7. Remove pork; keep hot.
  8. Boil pan juices about 5 min till thickened.
  9. Serve pork with sauce; garnish with watercress.
  10. Serves 6.
