Fruit in Spiced White Wine

  1. Combine 4 ingredients in heavy medium saucepan.
  2. Scrape in seeds from vanilla bean; add bean.
  3. Bring to boil.
  4. Reduce heat to medium-low; simmer 30 minutes to blend flavors.
  5. Combine apricots and cherries in large bowl.
  6. Pour hot wine mixture over.
  7. Cool to room temperature.
  8. Cover and chill.
  9. (Can be made 1 day ahead.
  10. Keep chilled.)
  11. Serve fruit with liquid.
