Stuffed Bell Peppers -Vegetarian

  1. Mix burger, corn, and salsa in a large nonstick skillet on medium-high heat for 5 minutes, stirring frequently.
  2. Remove from heat.
  3. Add 1 1/2 cooked rice and 1/2 cup cheese and mix well.
  4. Spoon in burger mixture evenly into the pepper halves.
  5. Place in 9x13-inch baking dish.
  6. Pour water into dish; cover with foil.
  7. Bake at 400F for 30 minutes.
  8. Uncover; sprinkle with remaining 1/2 cup of cheese.
  9. Continue baking 10 minutes.
  10. Sometimes I will put in a smaller dish and cover with flavored tomato sauce.
