Winter Squash and Lentil Bisque

  1. In 3-quart saucepan, heat squash, apples, onion, applesauce, apple juice, nutmeg, red pepper and 1 cup of the broth to boiling, stirring occasionally; reduce heat.
  2. Cover; simmer 20 minutes.
  3. In blender or food processor, place squash mixture.
  4. Cover and blend on medium speed until smooth; return mixture to saucepan.
  5. Stir in the lentils and remaining broth.
  6. Heat to boiling; reduce heat.
  7. Cover; simmer 25 to 30 minutes, stirring occasionally, until lentils are tender.
  8. Set oven control to broil.
  9. Sprinkle cheese on bread slices.
  10. Place on rack in broiler pan.
  11. Broil bread with top 3-inches from heat about 2 minutes or until cheese is bubbly.
  12. Top each serving of soup with slice of cheese bread and chopped onion.
