Scrumptious Whole Wheat Crepes

  1. Place all ingredients in blender or food processor.
  2. Cover and blend until smooth.
  3. Spray 6-inch nonstick skillet w/ nonstick cooking spray.
  4. Heat skillet over medium heat.
  5. For each crepe, pour 2 T.
  6. batter into skillet.
  7. IMMEDIATELY rotate skillet until think film covers bottom.
  8. Cook 45 seconds to 1 minute or until batter is set.
  9. Run wide spatula around edge to loosen; turn and cook other side about 30 seconds or until light brown.
  10. Stack crepes, placing wax paper between each; keep covered.
  11. Repeat with remaining batter to make 12 crepes.
