Roasted Mushrooms & Balsamic Onions
- 5 ounces shiitake mushrooms, sliced (3 cups)
- 10 ounces baby portabella mushrooms, halved
- 1 lb portabella mushroom, 1-inch dice (about 7 cups)
- 10 ounces balsamic onions, drained and halved (Wegman's Italian Classics)
- 12 cup basting oil
- Preheat oven to 450 degrees.
- Combine mushrooms and onions in large bowl; season to taste with salt and pepper.
- Pour basting oil over mushroom mixture; stir carefully to combine.
- Arrange mushroom mixture in single layer on baking sheet.
- Roast on center rack of oven for 15 minutes.
- Reduce heat to 350 degrees; cook 15-20 minutes until carmelized.
