Strawberry Mousse

  1. In small saucepan, bring cider to a simmer over low heat.
  2. Add agar-agar; stir until dissolved, about 5 minutes.
  3. In food processor, combine cider mixture, tofu, strawberries, honey and vanilla.
  4. Process until almost smooth.
  5. Pour into dessert dishes.
  6. Chill at least 1 hour.
