Strawberry Mousse
- 1/2 cup apple cider or juice
- 1 Tbs. agar-agar flakes
- 12.3-oz. pkg. soft silken tofu
- 3 cups hulled strawberries
- 3 Tbs. honey
- 1 tsp. vanilla extract
- In small saucepan, bring cider to a simmer over low heat.
- Add agar-agar; stir until dissolved, about 5 minutes.
- In food processor, combine cider mixture, tofu, strawberries, honey and vanilla.
- Process until almost smooth.
- Pour into dessert dishes.
- Chill at least 1 hour.
