Simple Soba Salad

  1. To make the dressing, combine the ginger, soy sauce, broth, vinegar, sugar, oil and chili sauce.
  2. Allow to rest, unrefrigerated, for an hour to let the flavors mature.
  3. Cook the noodles in boiling unsalted water for 6 to 7 minutes.
  4. Then drain in a colander and rinse twice.
  5. Slice the green and white parts of the scallions very thinly.
  6. Combine dressing, noodles, and scallions in a large bowl and toss.
  7. Garnish with toasted sesame seeds.
  8. This is good at any temperature.
  9. The original recipe indicated that the Chef enjoyed the leftovers cold for breakfast.
