Simple Bruschetta Chicken
- 1 pound Chicken Breast Tenders (boneless, Skinless Chicken Breast Halves Or Breasts Will Work Too)
- 1/2 cups Italian Salad Dressing, Divided
- 2 Tablespoons Olive Oil
- 2 dashes Salt
- 2 dashes Pepper
- 1 teaspoon Dried Basil (or 1/4 Cup Of Fresh Chopped Basil)
- 1 cup Chopped Tomatoes
- 1/2 cups Shredded Mozzarella Cheese
- Place half of the chicken in a sealed bag with 2 tablespoons of the Italian dressing and shake to coat thoroughly.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Remove chicken from the bag and put it into the skillet and season with salt and pepper.
- Cook until browned on both sides and cooked through.
- Depending on the thickness this could take up to 5 minutes per side or longer.
- Tenders will take less time.
- Remove chicken from skillet.
- Put the other half of the chicken into the bag with the dressing and mix to coat.
- Then repeat the cooking process cooking it in the remaining olive oil.
- Meanwhile, in a small bowl combine basil, tomatoes, 1/4 cup of Italian dressing, and 1/2 cup of shredded mozzarella cheese.
- Once chicken is cooked, return all of the chicken to the skillet and turn heat to medium-low.
- Pour prepared tomato-dressing mixture over the top and cover the skillet.
- Cook for a few minutes longer, just until heated and cheese is melted.
- Serve immediately.
- *Note: I have also made this successfully using balsamic vinaigrette in place of the Italian dressing.
