Family favourite Christmas EggNog
- 1400 ml whole milk
- 600 ml heavy or double cream
- 2 Vanilla bean pods split with seeds removed
- 3/4 piece freshly grated nutmeg
- 3 cinnamon sticks
- 350 ml vanilla spiced rum
- 7 large eggs
- 200 g granulated sugar
- Combine milk, cream, nutmeg, cinnamon sticks, and vanilla seeds and the pods into a large saucepan.
- Bring to the boil slowly then remove from the heat
- Whisk the egg yolks and sugar together until thick ribons form, then slowly add and whish into the milk mixture
- Add the Rum and continue slowly whisking with a hand whisk.
- Rum can be substitued for brandy.
- Allow to steep over night in the fridge
- Sieve out the mixture removing the cinnamon and vanilla pods
- Whisk egg whites until soft peaks form.
- Fold into the milk mixture and serve in christmasy glasses or mugs
- Garnish with freshly grated nutmeg and a cinnamon stick, with a mini gingerbread man at the side to dip in :)

- If heating through serve before allowing to steep and do not add the egg whites.
- Do not reheat
- Also goes well with a little gingerbread
