Sig's Lunch in Bed :)

  1. Either make some fresh mashed potato (you can try instant but I don't use it) or use leftover mashed potato.
  2. Fry this gently until it is heated through and starts browning a little.
  3. Either fry your bread in a frying pan leaving it almost uncooked from one side and browned from the other side , remove from pan.

  5. You can also grill the bread one side hardly cooked other side browned or to liking .
  6. Use a medium sized cutter , round ,square or star, or any shape that can be equally divided , place in middle and cut out of center.of the bread, Set the cut out piece of bread aside .
  7. Spread the mashed potato over the lesser cooked side of bread bread and the cut out.
  8. Turn on your grill so it is ready.
  9. Place your bread on a slightly greased oven metal plate or use the bottom of a spring form , that comes out .
  10. Add a few thin slices of a soft creamy goats cheese .Sprinkle the cheese with all the seasoning
  11. Take the shape that you covered with mashed potatoes and cut in halves or quarters.and put on bread.
  12. you can put cheese and cut out bread wherever you want, except center
  13. Pour the egg into center and carefully grill until the egg has cooked to your liking I like my yolk kind of runny but glazed over at the top , toast it off.
  14. Alternately you can fry one side of bread bread just a little more than the other, keeping both side sides cooked but just one a little browner.Removr bread.
  15. Spread mashed potato on the side that is softest , make cut out , add bread bake to frying pan add egg and then precede as follows when egg has cooked on bottom but still runny elsewhere remove from pan ,place on baking plate or tray add bread cut outs, cheese and seasonings and the cheese and put under grill to be toasted off.
