Irish Soda Bread
- 4 cups all purpose flour
- 1/4 cup sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 cup butter or margarine
- 3 to 4 Tbsp. caraway seeds
- 2 cups raisins
- 1 1/3 cups buttermilk
- 1 egg, beaten
- In mixing bowl combine flour, sugar, salt, baking powder and baking soda.
- Cut in butter until mixture resembles coarse meal. Stir in caraway seeds and raisins.
- Combine buttermilk and egg. Stir into dry ingredients just until moistened.
- Turn out onto a floured surface and knead lightly.
- Shape dough into balls and place in greased baking pan.
- Pat into a 7 inch round loaf.
- Cut a 4 inch cross about 1/4 deep on top to allow for expansion.
- Brush top with milk.
- Bake at 375u0b0 for 1 hour or until golden brown. Yield:
- 1 loaf.
