Barley Cheese Soup Recipe

  1. Combine all ingredients except lowfat milk, flour, and cheese in 4-qt glass bowl or possibly soup tureen.
  2. Cover with wax paper, cook in microwave oven at high 18 to 20 min.
  3. Combine 1/2 c. lowfat milk and flour, mixing till well blended; gradually add in to soup with remaining 1 c. lowfat milk.
  4. Cover with wax paper.
  5. Cook 5 min more in microwave.
  6. Stir in cheese.
