Cous Cous Salad

  1. Cook onion in low fat cooking spray until soft, stir in spices and cook for 1 minute.
  2. Add the cous cous, stir and remove from heat.
  3. Add the apricots, pour on boiling water, over and leave to cool.
  4. Place in a bowl and fluff up with a fork, add lemon juice, pepper nuts and parsley, stir well.
