Thai Basil Chile Chicken with Green Beans

  2. Prepare the rice according to package instructions.

  4. Slice two cloves of garlic very thinly, and finely chop the other two.

  6. Trim the green beans and cut them into 1 inch pieces.

  8. Heat 1 teaspoon of oil in a large skillet over medium high heat.

  10. Add the sliced garlic and cook for about 30 seconds.
  11. Add the green beans, 1/4 cup water, and a pinch of salt and pepper.
  12. Cook for about 4 minutes, stirring frequently.

  14. Meanwhile, seed and finely chop the chile.
  15. Use gloves or plastic baggies to protect your fingers!

  17. Remove the green bean mixture from the skillet and set aside.

  19. Add 1 tablespoon of oil to the skillet and heat over medium high heat.

  21. Meanwhile, thinly slice the chicken and cut it into bite size pieces.

  23. Add the 2 cloves of chopped garlic and the chopped chile to the oil and stir for about 30 seconds.

  25. Add the chicken and brown for about 2-3 minutes.

  27. Add 2 tablespoons of water, the fish sauce, soy sauce, and sugar.
  28. Stirring, cook for about a minute longer.

  30. Add the basil and cook for about 30 seconds, or until just wilted.

  32. Add the green bean mixture to the chicken mixture and stir to combine everything.
  33. 15.
  34. Serve with the prepared brown rice.
