Thai Basil Chile Chicken with Green Beans
- 1 cup Brown Rice, The Quick Cooking Kind
- 4 cloves Garlic, 2 Sliced Thin And 2 Chopped
- 1 pound Green Beans, Trimmed And Cut Into 1 Inch Pieces
- 1 teaspoon Vegetable Oil
- 1/4 cups Water
- 1/4 teaspoons Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 1 whole Serrano Chile-seeded And Finely Chopped
- 1 Tablespoon Vegetable Oil
- 1- 1/2 pound Chicken, Breast Or Tenders, Thinly Sliced And Cut Into Bite Size Pieces
- 2 Tablespoons Water
- 1- 1/2 Tablespoon Fish Sauce
- 1 teaspoon Soy Sauce (I Used The Low Sodium Kind.)
- 2 teaspoons Sugar
- 1 cup Fresh Basil Leaves

- Prepare the rice according to package instructions.
- 2.
- Slice two cloves of garlic very thinly, and finely chop the other two.
- 3.
- Trim the green beans and cut them into 1 inch pieces.
- 4.
- Heat 1 teaspoon of oil in a large skillet over medium high heat.
- 5.
- Add the sliced garlic and cook for about 30 seconds.
- Add the green beans, 1/4 cup water, and a pinch of salt and pepper.
- Cook for about 4 minutes, stirring frequently.
- 6.
- Meanwhile, seed and finely chop the chile.
- Use gloves or plastic baggies to protect your fingers!

- Remove the green bean mixture from the skillet and set aside.
- 8.
- Add 1 tablespoon of oil to the skillet and heat over medium high heat.
- 9.
- Meanwhile, thinly slice the chicken and cut it into bite size pieces.
- 10.
- Add the 2 cloves of chopped garlic and the chopped chile to the oil and stir for about 30 seconds.
- 11.
- Add the chicken and brown for about 2-3 minutes.
- 12.
- Add 2 tablespoons of water, the fish sauce, soy sauce, and sugar.
- Stirring, cook for about a minute longer.
- 13.
- Add the basil and cook for about 30 seconds, or until just wilted.
- 14.
- Add the green bean mixture to the chicken mixture and stir to combine everything.
- 15.
- Serve with the prepared brown rice.
