Easter Surprise Cookies

  1. Heat oven to 350F.
  2. Combine all cookie ingredients except flour and jelly beans in bowl.
  3. Beat at medium speed, scraping bowl often, until well mixed.
  4. Stir in flour until well mixed.
  5. Shape rounded teaspoonfuls of dough into 1-inch balls.
  6. Place 1 jelly bean in center of each ball making sure candy is covered with dough.
  7. Place cookies 2 inches apart onto ungreased cookie sheets.
  8. Bake 15-18 minutes or until edges are lightly browned.
  9. Cool completely.
  10. Combine powdered sugar and enough milk for desired glazing consistency in bowl; stir until smooth.
  11. Tint coconut with food color, if desired.
  12. Dip tops of cookies in glaze; sprinkle with coconut.
