Cauliflower, Anchovy, and Caper Salad
- 1/2 of a large head Cauliflower
- 3 Anchovy fillets
- 1 large Capers
- 1 optional, to garnish Finely chopped parsley
- 2 tbsp Olive oil
- 1 tbsp Wine vinegar
- 2 tsp Lemon juice
- 2 small Minced onion
- 1 pinch Pepper (+ salt if necessary)
- Break the cauliflower into small pieces and boil (they taste better when only boiled so that they still retain its texture).
- Drain the water thoroughly once boiled.
- Combine the ingredients into a bowl.
- Add the finely chopped anchovies, and lightly rinsed capers.
- Add the cauliflower and coat everything with the dressing.
- Optionally garnish with parsley and enjoy.
