Aunt Nesta's Best Zucchini Bread

  1. Blend eggs, sugar, applesauce and smart balance until creamy.
  2. In separate bowl mix flours, baking powder, baking soda, cinnamon and salt.
  3. Gradually add flour mixture to egg mixture until combined thoroughly.
  4. Gently fold in shredded zucchini (peeling it is optional)and vanilla.
  5. Add nuts if desired.
  6. Pour into loaf pan and bake at 350 for one hour.
  7. Let cool 30 minutes and remove from pan.
  8. Store in airtight container.
