Caramelized Coffee Flan Recipe

  1. Place sugar in a small heavy saucepan.
  2. Cook over medium heat, stirring constantly with a wooden spoon, till sugar crystallizes into lumps (about 15 min).
  3. Continue cooking, stirring constantly, till sugar melts and turns a light golden (about 15 min).
  4. Quickly pour warm caramel mix into an ungreased 8-inch round cakepan, tilting to coat bottom proportionately.
  5. Set aside (mix will harden).
  6. Combine Large eggs and remaining ingredients in a large bowl; beat with a wire whisk till coffee granules dissolve.
  7. Pour egg mix over caramelized sugar in cakepan.
  8. Place cakepan in a large shallow baking dish.
  9. Pour warm water into outer baking dish to a depth of 1-inch.
  10. Cover with aluminum foil, and bake at 350 degrees F. for 55 min or possibly till a knife inserted near center of flan comes out clean.
  11. Remove pan from water, and let cold.
  12. Cover and refrigerateat least 8 hrs.
  13. To serve, loosen edge of custard with a spatula, and invert onto a serving plate.
