Grainy Casserole
- 5 medium carrots, thinly sliced
- 2 cups corn
- 1 medium onion, diced
- 1 cup quick-cooking barley
- 12 cup bulgur
- 1 teaspoon salt
- 12 teaspoon pepper
- 3 cups vegetable broth
- 1 (15 ounce) can black beans, rinsed and drained
- 2 cups shredded cheddar cheese
- Preheat oven to 350.
- Combine all ingredients into a 13 x 9 baking dish coated with cooking spray.
- Cover and bake at 350 for 50-55 minutes or until grains are tender, stirring once.
- Top with cheese.
- Bake an additional 3-5 minutes or until cheese is melted.
