Chestnut Cake With Pancake Mix

  1. Line a pound cake pan with parchment paper.
  2. Preheat the oven to 170C.
  3. Mash 100 g of the chestnuts using a fork.
  4. Put the butter or margarine (brought to room temperature in advance) in a bowl, and cream it.
  5. Mix in the sugar and add the beaten egg in 2-3 batches.
  6. Mix well after each addition.
  7. Add the mashed chestnuts and mix well.
  8. Add the pancake mix and milk to the batter and mix in thoroughly with a spatula.
  9. Pour the batter into the cake pan.
  10. Put 100 g of chestnuts (not mashed) in the middle of the batter if you like.
  11. Bake in the oven at 170C for 45-50 minutes.
  12. Check to see if it's cooked by piercing the cake with a bamboo skewer.
  13. If it comes out clean, it's ready.
  14. The baking time varies depending on your oven, so adjust the time and temperature accordingly!
