Chestnut Cake With Pancake Mix
- 200 grams Pancake mix
- 200 grams Chestnuts simmered in their skins
- 20 grams Sugar
- 1 Egg
- 80 ml Milk
- 80 grams Butter (or margarine)
- Line a pound cake pan with parchment paper.
- Preheat the oven to 170C.
- Mash 100 g of the chestnuts using a fork.
- Put the butter or margarine (brought to room temperature in advance) in a bowl, and cream it.
- Mix in the sugar and add the beaten egg in 2-3 batches.
- Mix well after each addition.
- Add the mashed chestnuts and mix well.
- Add the pancake mix and milk to the batter and mix in thoroughly with a spatula.
- Pour the batter into the cake pan.
- Put 100 g of chestnuts (not mashed) in the middle of the batter if you like.
- Bake in the oven at 170C for 45-50 minutes.
- Check to see if it's cooked by piercing the cake with a bamboo skewer.
- If it comes out clean, it's ready.
- The baking time varies depending on your oven, so adjust the time and temperature accordingly!
