Grilled Pork Loin with Pineapple Salsa

  1. Preheat grill to high heat.
  2. Mix pineapple, red pepper, cilantro and dressing until well blended.
  3. Cover and refrigerate until ready to serve.
  4. Combine coating mix and seasonings in large plastic bag.
  5. Brush lime juice evenly onto meat.
  6. Place meat in bag with coating mixture; close bag and shake until meat is evenly coated.
  7. Remove meat from bag; place in disposable roasting pan, or on large piece of foil that has been poked in several places with holes.
  8. Press any remaining coating mixture onto meat.
  9. Turn off one of the grill burners, then place meat on that side.
  10. Close lid of grill.
  11. Cook 1 to 1-1/4 hours or until meat is cooked through.
  12. (Pork is done when meat thermometer inserted into thickest part of meat registers 160F.)
  13. Serve with the pineapple mixture.
