Tea-Flavored Truffles That Melt in Your Mouth

  1. Put the heavy cream, milk, and sugar syrup into a small pot, and turn on the heat.
  2. When it starts to boil, add the tea leaves.
  3. Bring to a boil again, turn off the heat, and let it sit for 4 ~ 5 minutes.
  4. Pour the Step 1 tea mixture through a tea strainer into a bowl with the finely chopped chocolate.
  5. Let it sit for about 30 seconds after finished pouring the tea mixture.
  6. Mix with a spatula in the middle of the bowl.
  7. Don't stir at the edge!
  8. When blended in well, add the brandy and mix some more.
  9. Line the 13 cm square container with plastic wrap, and pour in the mixture.
  10. Chill in the fridge to harden.
  11. You can make a mold with aluminium foil and pour in the mixture.
  12. When hardened, cut into your preferred size pieces with a knife.
  13. I cut into 2 x 3 cm pieces this time.
  14. Coat with cocoa powder, and done.
  15. Put in a box, and it will make a great gift.
