Tea-Flavored Truffles That Melt in Your Mouth
- 200 grams Sweet chocolate (finely chopped)
- 110 grams Heavy cream
- 30 grams Starch based sweet syrup (sugar syrup)
- 40 grams Milk
- 8 grams Tea leaves (Earl Grey)
- 1 tbsp Brandy
- 1 Cocoa powder
- Put the heavy cream, milk, and sugar syrup into a small pot, and turn on the heat.
- When it starts to boil, add the tea leaves.
- Bring to a boil again, turn off the heat, and let it sit for 4 ~ 5 minutes.
- Pour the Step 1 tea mixture through a tea strainer into a bowl with the finely chopped chocolate.
- Let it sit for about 30 seconds after finished pouring the tea mixture.
- Mix with a spatula in the middle of the bowl.
- Don't stir at the edge!
- When blended in well, add the brandy and mix some more.
- Line the 13 cm square container with plastic wrap, and pour in the mixture.
- Chill in the fridge to harden.
- You can make a mold with aluminium foil and pour in the mixture.
- When hardened, cut into your preferred size pieces with a knife.
- I cut into 2 x 3 cm pieces this time.
- Coat with cocoa powder, and done.
