Boysenberry Swirl Frozen Yogurt Recipe
- 1 env unflavored gelatin (1 tbsp)
- 1/2 c. Lowfat milk
- 2 x Large eggs
- 2 Tbsp. Sugar
- 2 Tbsp. Light corn syrup
- 2 c. Yogurt
- 1 Tbsp. Lemon juice
- 2 tsp Vanilla
- 1/8 tsp Salt
- 1/2 c. Seedless red Boysenberry preserves.
- Granola (garnish)
- Sprinkle gelatin over lowfat milk in small saucepan; let stand 3 min.
- heat over low heat, stirring constantly, till gelatin dissolves.
- Cold slightly.
- Beat Large eggs in large mixer bowl on medium speed till thick and lemon colored, beat in sugar and corn syrup gradually.
- Beat in gelatin mix, hogurt, lemon juice, vanilla and salt on medium speed.
- Place in bowl and freeze for about two hrs.
- Beat again till smooth and creamy, and freeze for about two more hrs.
- Spoon frzn yogurt into chilled bowl and swirl Boysenberry preserves into yogurt mix.
- Garnish with granola.
