Vegan Blueberry Bars
- 2 cups Regular Rolled Oats
- 1- 1/4 cup Oat Flour (grind Up Oats To Make Flour If You Don't Have It On Hand)
- 1 teaspoon Cinnamon
- 2 Tablespoons Chia Seeds Or Ground Flax
- 1/2 cups Packed Brown Sugar
- 1/2 teaspoons Kosher Salt
- 13 cups Chopped Almonds
- 4 whole Dates, Pitted And Chopped Into Bite Size Pieces
- 1/4 cups Coconut Oil
- 1 Tablespoon Almond Butter
- 1/4 cups Brown Rice Syrup
- 2 teaspoons Vanilla Extract
- 1 teaspoon Almond Extract
- 1 cup Fresh Blueberries
- Line an 8 x 8 metal baking pan with parchment paper allowing the paper to hang over the edges (youll use the paper as a handle to remove cooked bars from pan).
- Preheat oven to 350 F.
- In a large bowl, whisk together all of the dry ingredients (oats through salt), nuts and dates.
- In a separate bowl, whisk together the wet ingredients (oil through extracts).
- Add wet ingredients into the dry and stir well until thoroughly combined.
- Fold in the blueberries and spoon the mixture into your baking pan.
- With wet hands (to prevent sticking), press mixture evenly into the pan.
- Press firmly to create a nice tight bar texture.
- Bake for about 30 minutes.
- Remove from oven.
- Allow to cool completely before removing from pan and cutting.
- These are best eaten immediately.
- Otherwise cut them into bars and refrigerate or freeze.

- Pop leftovers back in the oven for a few minutes to crisp them up again the next day.
