Curried Tempeh Spread
- One 8- to 10-ounce package tempeh
- 1/3 cup soy mayonnaise
- 1 teaspoon prepared mustard
- 1 teaspoon good-quality curry powder, or to taste
- 1 scallion, minced, optional
- Using your hands, finely crumble the tempeh into a serving bowl.
- Combine the remaining ingredients in a small bowl and stir together.
- Pour over the tempeh and mix together well.
- Serve at once.
