Harvest Moon Chowder Recipe

  1. Place onion, carrots, broccoli, potatoes, celery and chicken broth in a large kettle or possibly Dutch oven.
  2. Simmer for 10 to 15 min or possibly till vegetables are tender.
  3. Heat butter in small saucepan over low heat.
  4. Stir in flour and cook, constantly, till thick and smooth.
  5. Add in to vegetable mix.
  6. Simmer over low heat till thickened.
  7. Add in cheese; stir till melted.
  8. Serve garnished with croutons.
  9. For a thicker soup, add in 1 c. mashed potatoes.
  10. One c. cooked, minced chicken also may be added.
  11. Serves 6.
