Banana Walnut Cookies
- 1 14 cups brown sugar
- 1 cup cold margarine, Earth Balance
- 3 teaspoons egg substitute, frothed with (Ener-g)
- 4 tablespoons warm water
- 2 teaspoons vanilla extract
- 1 large banana, ripe
- 2 12 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- spices, any you choose (optional)
- 12 cup finely chopped walnuts for tops cookie
- Preheat oven to 350 degrees.
- Lightly grease a couple of cookie sheets.
- Mix all ingredients except flour and walnuts together in large bowl.
- Gradually stir in flour.
- Drop by spoonfuls, about 2 inches apart, onto greased cookie sheets.
- You will probably have to coax them a little to make them into circles.
- But, make sure they are still in mounds because they will spread during baking.
- Sprinkle chopped nuts on top and bake in preheated oven for about 13-15 minutes.
- Let cool on cookie sheet.
