Oriental Skillet Supper
- 1/2 c. pepper strips
- 1/3 c. bias cut celery slices
- 1 Tbsp. salad oil
- 1/3 c. cold water
- 1 Tbsp. soy sauce
- 2 tsp. cornstarch
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 1 medium tomato, peeled and cut into wedges
- 1 c. hot cooked rice
- 1/4 tsp. ground ginger
- 1 large or 2 small minute steaks, cut in 1/4-inch strips
- In heavy skillet, quickly cook green pepper and celery in oil until crisp-tender.
- Remove; set aside.
- Add meat to skillet; cook.
- Combine water, soy sauce, cornstarch, sugar and salt.
- Add to skillet.
- Cook and stir until mixture thickens and bubbles. Add celery, pepper and tomato.
- Heat through.
- Toss rice with ginger.
- Serve over ginger rice.
- Makes 2 servings.
