Cooked Light Concord Grape Jelly - CERTO Light Crystals
- 6-1/2 cups prepared juice (buy about 5 lb./2.2 kg. Concord grapes)
- 2 cups water
- 1 box Certo Light Pectin Crystals
- 4-1/2 cups granulated sugar, divided
- Stem and crush grapes, one layer at a time; place in large saucepan.
- Stir in water.
- Bring to boil; cover.
- Simmer 10 min.
- Place prepared grapes in jelly bag; hang and let drip into bowl until dripping stops.
- Press bag gently to remove any remaining juices.
- Measure exactly 6-1/2 cups prepared juice into large saucepan.
- Combine pectin crystals and 1/4 cup sugar; stir into prepared juice.
- Bring to boil on high heat.
- Stir in remaining sugar.
- Return to boil; cook 1 min.
- Remove from heat.
- Stir and skim 5 min.
- Pour into warm sterilized jars, filling up to 1/4 inch from rims.
- Cover with lids.
- Let stand at room temperature 24 hours or until set.
