Weeknight Beef Burrito Skillet
- 1 pound Lean Ground Beef
- 1 whole Small Onion, Chopped
- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 13 cups Frozen Corn
- 1 package Taco Seasoning, 1 Ounce Packet
- 3/4 cups Salsa
- 5 whole Corn Tortillas, Cut Into Thin Strips
- 1/2 cups Shredded Cheese
- In a large skillet, brown beef and onion together.
- Drain, return to skillet and add black beans and corn, followed by the seasoning packet and salsa.
- Stir to combine and add corn tortilla strips, stirring around to incorporate.
- Sprinkle the cheese over the top of the skillet and allow it to melt.
- To serve, top portions with shredded lettuce, sour cream and hot sauce, if preferred.
