Orange Marmalade-Glazed Chicken with Almonds
- 6 chicken thighs
- 1/2 cup orange maramalade
- 1/8 cup soy sauce
- 2 tbsp. honey
- 2 tbsp. fresh minced ginger
- 3/4 cup sliced almonds
- Black pepper
- Preheat oven to 375F.
- In a small mixing bowl, combine the marmalade, soy sauce, honey, black pepper and minced ginger, and mix well.
- Place the chicken thighs in a shallow baking or casserole dish, skin side up.
- Coat each with the marmalade mixture and top with sliced almonds.
- Bake uncovered, occasionally basting the chicken, at 375F for approximately 25-28 minutes or until the internal temperature reaches 180F.
