Gramma's Easy, Healthy Pumpkin Cookies
- 12 cup margarine
- 1 34 cups brown sugar
- 2 eggs
- 1 cup cooked pumpkin
- 1 cup white flour
- 1 cup brown flour
- 12 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon clove
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1 cup raisins
- 12 cup coconut
- 1 apple, chopped up
- 1 cup of chopped walnuts
- preheat oven to 375.
- Cream margarine and sugar in mixer.
- Add eggs, pumpkin, spices, salt, baking soda and baking powder.
- Mix in flours.
- With wooden spoon, mix in remaining ingredients.
- Drop teaspoonfuls onto greased cookie sheet.
- Bake for 12-15 minutes.
