Stuffed Yams

- 4 ounces cream cheese
- 1 egg yolk
- 1 teaspoon hot sauce
- 3 green onions, chopped
- 14 teaspoon fresh ground pepper
- 1 tablespoon butter
- 14 cup sour cream

- Prick the skins of the sweet potatoes all over with a fork, place on a microwave safe plate and bake in the microwave oven for about 6-8 minutes (depending on size) or until tender.

- While the potatoes are cooking, mix together the cream cheese, egg yolk, Siracha, spring onions and seasoning in a bowl; towards the end of the cooking time, preheat the oven to 350(.

- When tender, cut the sweet potatoes in half lengthways and, keeping the skins intact, scoop the flesh from the sweet potatoes and add to the cream cheese mixture.

- Stir all the ingredients together, and then stuff the mixture back into the skins.

- Place potatoes on pan.
- Dot the tops with butter.
- Reheat potatoes in oven; serve immediately with sour cream.
