Coconut Baked Chicken
- 4 whole Boneless, Skinless Chicken Breast Halves
- 1 Tablespoon Coconut Oil, Melted
- 1 cup Seasoned Bread Crumbs
- 1 teaspoon Salt
- 1 Tablespoon Parsley Flakes
- 1 teaspoon Garlic Powder
- Preheat oven to 375 F. Cut the chicken breasts into large strips.
- Basically I cut each breast in half.
- Put the melted coconut oil on a plate and roll the strips around in the oil.
- Put the breadcrumbs on another plate or shallow bowl.
- Add the salt, parsley and garlic powder into the breadcrumbs and mix well.
- Dip the oiled chicken into the breadcrumbs and coat thoroughly.
- Place on a rimmed baking sheet and bake at 375 F for 30 minutes.
