Light and Easy Pasta
- 1 Tablespoon Olive Oil
- 2 whole Onions, Sliced
- 4 cloves Garlic, Minced
- 4 cups Chopped Swiss Chard
- 2 cans (14 1/2 Oz. Size) Diced Tomatoes With Juices
- 1/4 cups Dry White Wine
- 1/4 teaspoons Dried Crushed Red Pepper Flakes
- 8 ounces, weight Gluten-free Pasta (quinoa Or Brown Rice)
- 1/4 cups Pitted And Chopped Olives
- 2 Tablespoons Pine Nuts
- 1.
- Heat oil in a heavy large frying pan over medium heat.
- Add onions and garlic and saute until tender.
- 2.
- Add chard and saute until it wilts.
- 3.
- Stir in tomatoes with their juices, wine and red pepper flakes.
- Bring to a simmer.
- Cover and simmer until the tomatoes begin to break down and the chard is very tender, stirring occasionally, about 5 minutes.

- Meanwhile, bring a large pot of water to a boil.
- Add the pasta and cook according to package instructions.
- Drain the pasta.
- 5.
- Transfer the pasta to serving bowls.
- Top the pasta with the sauce mixture, olives and pine nuts (I toasted the pine nuts for extra flavor.)
