Thai Stir-Fry Chicken and Vegetables

  1. Heat oil until hot, over medium-high heat (not smoking though).
  2. Add the garlic and ginger.
  3. Immediately, add the chicken.
  4. Cook, stirring constantly until cooked.
  5. Add veggies and sauces, water and chili flakes and sugar (I always taste it before adding the sugar in case its not needed).
  6. Continue to stir fry until the vegetables are cooked through but still somewhat firm.
  7. Stir in handful of chopped coriander.
  8. Garnish with a wedge or two of lime.
