Aunt Stella-Style Baked Potato Square Cookies

  1. Peel the skin from the sweet potato, soften by boiling or heating in the microwave, and mash.
  2. Add margarine and sugar to a bowl and stir.
  3. Add sweet potato from Step 2 and mix.
  4. Mix in the sifted cake flour.
  5. Divide into 2 equal portions and wrap.
  6. Mold into rectangular sticks, and chill in the fridge overnight.
  7. Slice into 8 mm ~ 1 cm pieces.
  8. Line up on a cookie sheet, and brush the surface with egg yolk.
  9. Shake black sesame into the center of the cookies.
  10. Bake them in a 355F/180C oven for 15-20 minutes, until they turn a delicious golden brown.
  11. They are done.
  12. They are really fragrant right after baking.
