Cranberry Dream Pie
- 3/4 cup granulated sugar
- 2 tsp cornstarch
- 1/4 cup cold water
- 2 cup fresh or frozen cranberries
- 6 oz cream cheese - softened
- 1 cup confectioners sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream - whipped
- 1 pastry shell, baked or graham cracker crust (9")
- In a sausepan, combine sugar, cornstarch and water until smooth.Add cranberries.
- Bring to a boil.
- Boil and stir for 2 min.
- Reduce heat .
- Cook until berries " pop" 5 min.
- Set aside.
- In mixing bowl beat cream cheese and confectioners sugar and vanilla.Fold in whipped cream .
- Spread into pie shell.Top with cranberry mixture.
- Chill for at least 4 hours.
- Store in refrigerator.
