Easy Roasted Veggies
- 1 each red, green, yellow, and orange bell pepper
- 1 zucchini
- 1 yellow squash
- 1 red onion
- 1 drizzle of olive oil
- 1 kosher salt
- 2 tbsp garlic powder
- 2 tbsp lemon-pepper seasoning
- Small dice veggies.
- Toss with olive oil.
- Season with salt and lemon pepper
- roast at 400 degrees approximately 25 minutes or until veggies are caramelized and tender
- Variations: Fresh chopped herbs, baby carrots, brussel sprouts, eggplant, sweet potatoes, pecans, turnips, squash, poblano peppers, honey mustard, broccoli, green beans, or different dried spices
