Cooked Peach Jam - CERTO Crystals

  1. Peel peaches; chop finely.
  2. Measure exactly 4 cups prepared peaches into large saucepan.
  3. Add pectin crystals; mix well.
  4. Bring to full rolling boil on high heat.
  5. Add sugar; mix well.
  6. Return to full rolling boil; cook 1 min.
  7. Remove from heat.
  8. Stir and sim foam for 5 min.
  9. to prevent fruit from floating to surface.
  10. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  11. Cover with lids.
  12. Let stand at room temperature 24 hours or until set.
