Mexicali Cheese Dip

  1. Cook bacon in large skillet on medium heat until crisp.
  2. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp.
  3. drippings in skillet.
  4. Drain bacon on paper towels.
  5. Add tomatoes and peppers to drippings in skillet; cook and stir 3 min.
  6. or until tomatoes are softened and most the liquid is cooked off.
  7. Stir in cheese; cook and stir 1 min.
  8. or until melted.
  9. Transfer to shallow serving dish; top with bacon, onions and cilantro.
  10. Serve with chips.
