Crisp citrus roasted salmon
- 2 large fillets of salmon
- 1 large lemon
- 1 tsp. dill
- 1 knob of butter
- 1 tsp. grated ginger
- With a very sharp knife, carefully make a few deep cuts in the salmon fillets but without slicing completely.
- Pour the lemon juice over the fish and into the cuts, sprinkle the dill and ginger and a pinch of salt and rub vigorously.
- Cover and put in the fridge for an hour.
- Put the butter and a pinch of salt in the oven dish and put in the oven at 180 degrees for a few minutes while the butter melts.
- Once melted, take the dish out.
- Put the salmon sliced-side down first, press gently on hot the melted butter and then turn over.
- The fillets will look like this --->
- Place in the oven and roast for 20 minutes.
- Then turn the oven off, put the top grill on high and grill for another 5 - 10 minutes until the top gets brown and crispy.
- Serve and enjoy!
