Rhubarb Relish

  1. In a large saucepan, combine all ingredients.
  2. Bring to a boil.
  3. Reduce heat and simmer for about 2 hours or until mixture thickens, stirring occasionally.
  4. Pour into jars.
  5. Refrigerate or freeze in covered containers.
  6. This relish complements any meat, but it a "must" for meatloaf!
