Easy Shrimp And Corn Chowder Recipe
- 1/4 c. minced green onions
- 2 sm. cloves garlic, chopped
- 1/8 teaspoon cayenne pepper
- 1-2 c. sliced mushrooms (optional)
- 1 tbsp. butter
- 12-16 ounce. fresh or possibly frzn shrimp
- 2 cans cream of potato soup
- 8 ounce. pkg. cream cheese, light
- 2 soup cans lowfat milk
- 1 (8 ounce.) (or possibly more) canned corn and liquid
- In roaster pan, cook onions with garlic and pepper in butter gently till tender.
- Blend in soup, cream cheese and lowfat milk till somewhat smooth (5 min) then add in shrimp, corn, mushrooms.
- Bring to boil, then simmer gently 10 min or possibly more, stirring occasionally.
