Snowbound Casserole
- 1 to 2 (6 oz.) cans chicken or use leftovers
- 1 small can evaporated milk
- 1 can cream of chicken soup
- 1 can chicken noodle soup
- 2 cans Chinese rice noodles or use chow mein noodles
- 1 medium onion, chopped
- 1/2 c. celery, chopped
- 1 Tbsp. margarine
- 1 (8 oz.) can tomato sauce
- 1/2 tsp. salt
- cooked rice
- 1/2 tsp. curry powder
- 1/8 tsp. pepper
- 1 c. green pepper, chopped
- 2 pkg. frozen fillets of sole, partly thawed (haddock or perch will do)
- In a large skillet (or electric frying pan), saute onion and celery until soft.
- Stir in tomato sauce, salt, curry powder, pepper and green pepper.
- Add dashes of hot sauce to taste (optional).
